Fitness pancake with oat flour

Ingredients (20 servings)

Dough

  • 3 eggs (3 egg whites and only 1 yolk)
  • 3 tablespoons of olive oil
  • 1 ½ grated carrots (finely grated)
  • 2 cups of semi-skimmed or skimmed milk
  • 1 cup of oat flour
  • 1 cup of cornstarch (corn flour)
  • 1 teaspoon of dried oregano
  • 1 teaspoon of baking powder
  • Salt to taste

Chicken Filling

  • 1 chicken breast, cut into large cubes
  • 4 garlic cloves
  • ½ medium onion, diced
  • ½ green bell pepper, chopped
  • 1 tomato, diced
  • ½ chicken bouillon cube
  • 1 teaspoon of annatto powder (coloral) or paprika
  • 1 teaspoon of dried oregano
  • 2 tablespoons of olive oil
  • Chopped fresh parsley to taste
  • Hot water

Sauce

  • 5 tomatoes, diced
  • 2 garlic cloves
  • ½ medium onion, diced
  • Hot water
  • Olive oil to taste
  • Salt to taste
  • Spices to taste

Preparation (1 hour)

Filling:

1️⃣ Start by preparing the filling.
2️⃣ In a hot pressure cooker, add 2 tablespoons of olive oil and sauté the chopped bell pepper until golden.
3️⃣ Once golden, add the onion, garlic, and chicken bouillon cube.
4️⃣ Stir until the chicken bouillon cube dissolves.
5️⃣ After it dissolves, add the chicken breast, tomato, annatto powder (or paprika), oregano, and stir.
6️⃣ Add hot water to cover the mixture and cook under pressure for about 20 minutes, or until the chicken shreds itself in the pot, depending on your stove.
7️⃣ Once the chicken is shredded and the filling is ready, finish with fresh parsley.

Dough:

8️⃣ While the filling cooks, prepare the dough.
9️⃣ In a blender, blend the 3 egg whites, egg yolk, olive oil, carrot, and milk until smooth.
🔟 Add the oat flour, cornstarch, oregano, baking powder, salt to taste, and blend again.
1️⃣1️⃣ Preheat a non-stick frying pan on low heat. Using a shallow ladle, pour the mixture to make disks.
1️⃣2️⃣ Be careful not to break the disks when flipping, as the dough is very thin and soft.
1️⃣3️⃣ Fill the disks with the chicken and roll them up.

Sauce:

1️⃣4️⃣ Sauté the onion and garlic in olive oil.
1️⃣5️⃣ Add the tomatoes and sauté.
1️⃣6️⃣ Gradually add water and let it cook until the mixture reaches a natural sauce consistency.
1️⃣7️⃣ Season with salt and spices to taste.

Assembly:

1️⃣8️⃣ Place the rolled-up pancakes in a baking dish and cover with the sauce.
