Ingredients
- Olive oil to taste
- 120 grams chopped onion
- 250 grams cooked and shredded chicken breast
- 50 grams seedless chopped tomato
- Salt to taste
- Crushed red pepper to taste
- Chopped parsley
- 50 grams tomato sauce
- 3 eggs
- 25 grams oat flour
- 35 grams light cream cheese
- 5 grams baking powder
Preparation
1️⃣ In a pan with olive oil, sauté the onion. Then, add the shredded chicken breast, chopped tomato, and stir.
2️⃣ Season with salt and crushed red pepper, and stir again. Add parsley, tomato sauce, and mix one more time. Set aside in a bowl.
3️⃣ In a blender, place the eggs, oat flour, light cream cheese, and baking powder. Blend until smooth.
4️⃣ Pour the mixture into the bowl with the chicken and mix. Transfer the mixture to a baking dish greased with olive oil. Bake in a preheated oven at 180°C (350°F) for 20 minutes.
