Ingredients
- 1 ½ cups of sweet tapioca flour
- 1 ½ cups of rice flour
- 2 teaspoons of sugar
- 1 teaspoon of salt
- 180 ml of warm water
- 10 g of dry yeast
- 2 eggs
- 3 tablespoons of extra virgin olive oil
Preparation
1️⃣ In a large bowl, mix the dry ingredients: tapioca flour, sugar, salt, and rice flour. Set aside.
2️⃣ In a separate small bowl, dissolve the yeast in warm water.
3️⃣ Beat the eggs lightly and add them to the dry ingredients along with the dissolved yeast and olive oil. Stir well with a fork or spoon.
4️⃣ Once the dough forms, use your hands to finish mixing, but no need to knead it.
5️⃣ Grease a 35 cm pizza pan with olive oil and spread the dough over it, forming a thin border around the edges.
6️⃣ Let the dough rest for about 20 minutes, covered with a clean dry cloth. During this time, preheat the oven to 180°C.
7️⃣ Bake for 10 minutes, and then it’s ready for topping!
