Ingredients
For the pre-fermentation
- ½ cup of warm water
- ½ tablespoon of dry yeast
- 1 teaspoon of demerara sugar
For the dough
- 2 eggs
- 30 g of olive oil
- 80 g of sweet potato
- 220 g of rice flour
- 170 g of sweet tapioca flour
- 15 g of golden flaxseed flour
- 1 teaspoon of apple cider vinegar
- 1 teaspoon of salt
Preparation
Pre-fermentation
1️⃣ Dissolve the yeast and sugar in the warm water.
2️⃣ Let it rest for 10 minutes until it forms foam. Set aside.
Dough preparation
1️⃣ First, cook the sweet potatoes and mash them well.
2️⃣ Next, mix the flours in a large bowl and set aside.
3️⃣ In another container, mix the eggs, olive oil, and mashed sweet potato.
4️⃣ Add the foam from the pre-fermentation and mix gently.
5️⃣ Gradually add the flour mixture to the wet ingredients, stirring well.
6️⃣ As the dough becomes firmer, start kneading by hand, and stop adding flour when the dough is smooth and no longer sticking to your hands. Let it rest for 10 minutes.
7️⃣ Line a flat surface with plastic wrap and roll the dough out into a disc.
8️⃣ Now, choose your favorite sauce and bake for about 15 minutes in a preheated oven at 200°C. Then, add your toppings and finish baking.
