Vegetarian pizza

Ingredients

  • 1 cup of brown rice flour
  • ½ cup of sweet tapioca flour
  • ½ cup of rolled oats
  • ½ teaspoon of salt
  • ½ teaspoon of xanthan gum
  • 1 tablespoon of brown sugar
  • ½ tablespoon of instant dry yeast
  • 1 tablespoon of chimichurri or oregano
  • 2 tablespoons of olive oil
  • 1 cup of warm water

Preparation

1️⃣ In a large bowl, mix all the dry ingredients very well: flour, tapioca, oats, salt, xanthan gum, sugar, yeast, and the chosen spices.
2️⃣ Once well mixed, make a well in the center and start adding the warm water little by little.
3️⃣ As you add the water, stir with a wooden spoon, observing the consistency. The dough should be a bit firm, so you might not need all the water if it reaches the right consistency sooner.
4️⃣ Grease a 28 cm pizza pan with plenty of olive oil and dust it with some rice flour.
5️⃣ To spread the dough, wet the tips of your fingers and press it evenly over the pan.
6️⃣ Let the dough rest for 30 minutes. Preheat the oven to 200°C during this time.
7️⃣ Use a fork to prick the dough all over.
8️⃣ Bake for 20 minutes, and it’s ready.
